Here’s what to do with your leftover Halloween Pumpkin!

 

Remember pumpkins aren’t just for carving!

 

We’re aware that most students will be having their Halloween parties right now and will most likely wake up tomorrow morning feeling not so fresh after your big Halloween night out! But don’t waste your day and don’t waste your pumpkin!

 

 

We’ve put together 4 things you can do with your left over carved spooky pumpkin!

 

  • Obviously ROAST it – chop it up & splash a bit of honey, salt, pepper and paprika for colour and pop it in the oven on around 180°C. Simple.

 

  • Pumpkin Soup! Chop up whatever you have left & a couple of carrots and add into a pan of boiling water with garlic and onions. Once this has boiled, take off the heat and drain. Add 1 litre of veg stock and blend away until you’re left with a nice creamy pumpkin soup!

 

  • Pumpkin Hummus… lush! Chop up the pumpkin flesh you have left and pop them onto a baking tray with garlic & olive oil. Bake these for 45 minutes again on 180°C. Once done, add to food processor with chick peas & more olive oil and blend until smooth. Make sure to season generously!

 

  • Our FAVE, Pumpkin Crisps! Yummmm. Skin your pumpkin and drop all skin onto a baking tray, cover lightly in olive oil & season with salt and pepper. Bake on 180°C for 25-30mins and serve. This is so good with garlic mayo.
